To each their own, get all the advice you can, then figure out your own path.
When the weather cools off a bit more, check out the Withlacoochee Citrus Tract in Inverness, FL. 4 loops, 3 free hike-in camping sites. Some hint of elevation change here and there.
There is a thread or two in this section about it, and some of the maps are better than some of the others. 2 of the campsites have water nearby, one of those two is easy enough to cache water near it before you hike in (accessible by car), while the other is a hand pump on a horse trail a short walk away from camp (directions in another thread).
The ticks aren't as bad as they are in Ocala, but there ARE ticks, so treat your clothing. The permethrin DOES work.
Thanks for the tip MtDoraDave. I’ll definitely check it out. We did the C&O canal path from Maryland to DC last year. It was our first experience at a multi day trip involving bicycles and camping. It was awesome and we would love to find that kind of opportunity here close to home. Thanks again!
The panhandle has some great hiking also.

Two years retired, two winters in Tampa, and two day-hikes on different sections in the Green Swamp Wilderness. I really enjoyed the change from the North Country Trail and AT. This coming year, I am looking at hiking the Florida Trail in the Ocala area... Billies Bay Wilderness, Alexander Springs Wilderness or Juniper Prairie.
Went to hidden pond last weekend, no shortage of people.
Here’s a few from Guana Wildlife Preserve. Tons of great hiking in Florida.

Myakka a couple of times. Had the trails to myself. Remember it can get damn hot in Florida even in the winter. Hike accordingly.
Of course Key West is awesome to "hike" on a weekend evening.
