Got lots of 'em here where I live to. I eat them raw, hubby made a ramp meat loaf twice already this ramp season
Ive often wondered if any of the thru hikers eat them while on their way to Maine.

Bash 2010. Ron, myself and a thru hiker dug a big mess for Marcella.
I remember hikers telling me about them. Saw a TON in places. Finally tried a couple with a tortilla roll up. It was OK, but for 2 days after, I stank ! My urine, sweat and other body output was really bad. I decided regular hiker stench was bad enough, I didn't want to add to it. It was fun spotting them as I hike, though.

While they're in season we pickle them so they're available year round. Also can make "sauerkraut" with them in a bucket with salt / brine.
Can get $12-20 / lb for them here in the City. Make sure not to harvest more than half of them from a given area otherwise they wont re-seed for next year and will be gone.
This time of year is crazy for foraged vegetables / leaves because spring is when everything becomes tender and mild flavored - a lot of stuff that is great now will be awful later in the year when it is more mature - Mugwort, Japanese Knotweed, Stonecrop, Chickweed, Stinging Nettles, Ground Ivy, etc etc etc
Of course foraging and LNT are kind of at odds with one another at times...
I am going to try and stay up wind from ya'll.

For the better the mess I grilled tonight was with a great meal instead of Mac n" cheese w/ tuna, on the bad side $16 a LB in Dallas TX. A full LB of them however is quite a lot, I wish I could breath on you on all right now.
