    Default water availability

Does anyone know how often water is available doing a thru-hike from Georgia to Maine?

You can pick up new water every 5-7 days in town. No, wait, that's food.

Water is available on the trail several times per day, in general. Stream crossings, springs, etc. The vast majority of shelters have a spring or stream nearby.

The trail guides list water sources. Some of the maps have them marked, too. Water isn't usually much of an issue.
    If not NOW, then WHEN?
