And you only need 2-3 days food to gatlinburg.
Or bring enough from NOC to get to standing bear
That store has never had a lot of resupply. The easiest thing to do is mail yourself a resupply from Hiawassee to the Fontana Inn. I think there is a charge if you don't stay there. I've done this several times and have taken hikers from the parking lot on Hwy 28 to the inn a bunch of times so they could pick up their resupply at the inn. Works great.
You can also use a resupply service like Zero Day Resupply.
On a side note, I’m always surprised at how under equipped Fontana is every year. It’s like it’s a shock when hikers come through.
I only mailed two resupply boxes on my hike, Fontana was the first, the hotel accepts packages. You should be able to make Standing Bear in 5 or 6 days and they have good resupply. If not it is about 3 days to Newfound Gap and Gatlinburg.

Robbinsville, an easy hitch from Stecoah Gap, has a large grocery store. I saw no need to go to Fontana Village after that stop.

The AT Guide just posted on Facebook this morning that the General Store at Fontana will open March 29.
