    Default Cajun Couscous Carbonara

    I tried this recipe out today and it was pretty good

    1 cup couscous
    2 tblspns bacon bits
    1 tblspn dehydrated veggie soup mix
    .5 teaspn file (ground sassafrass leaves)
    Handful of dehydrated green beans
    1.5 cups boiling water
    1 tblspn dark Cajun roux mixed into boiling water
    Combine in a quart zip lock and put in a cozy for 10 minutes
    Hot sauce to taste

    *I used green beans because it's what I had but okra, mushrooms, peas, whatever you like for veggies would work. Probably some lemon zest too.

    This was a huge portion, so plenty for two or you can size it down if you don't eat big meals.

    Where am I getting ground sassafras? Foraged? In all my time using sassafras I've only thought about making tea and toothbrushes. Now, you throw this sassafras monkey wrench into my sassafras way if thinking..addng it into food as a spice. I like this.

    It's a Cajun seasoning added to gumbo. I get it from relatives who forage it, but you can buy sassafrass leaves in health stores sometimes. Just don't grind it in your house. It's spicy and non water soluble, so breathing in a small amount will make you cough like crazy.

    Goes in my trash bag. But you can just as easily let it steep in your pot and eat it straight from there.

    Mrs. Wayne says that you can find File in the spice section of any decent supermarket.
    I’m still trying to decipher Cajun and couscous. Where I come from it should be rice.

    I'm sure rice would work, or quinoa. i just don't do much rice for backpacking meals. i never get the texture i like.

    I want to work on a pistachio and dried fruit curry to put over couscous. I'm just not sure how to get a thick sauce in the rehydrate and serve method.

    I hear ya. At home I would never use bacon bits either. Crisp up some hog jowl and make the roux from the drippings.

    This sounds awesome. When you work it out before burning down the kitchen you have to share. Put some File in it. It makes everything taste better.

    I thought I knew something about spices. I didn't know merde until you crawdad atin locals arrived.


    Curious. The cous cous you're referring to is it semolina or corn based?

    I would assume semolina couscous.

    And I'm thinking powdered pumpkin is going to be the key to this curry. I will order a bag and report my findings. I'm laid up after hernia surgery, so plenty of time to play in the kitchen.

    Pumpkin Pie spice in the powdered pumpkin.
