Hard to beat southern New Zealand. An incredible trail network and good transportation options. Fly into Queenstown and there are shuttles services that will bring you anywhere you need to go. No need to deal with shuttles.
ok, I see now the canyon isn't on the list...just give me the polertec jacket then.
If I were looking to backpack outside the US right now, it would like be either in Ireland or Scotland. I am also interested in hiking the Camino De Santiago, you should google it if you are not familiar with it, as it is supposed to be an amazing and accessible experience.

When I first read this post I immediately thought, where would I live IF I could. You're right I'm wrong. What can I do? Drop the what IF.
With that thought many options.

So many incredible national parks here not sure why anyone would look elsewhere? There is good reason there are droves of foreign tourist and hikers at OUR national parks.....that said I would like to hike Ireland and Scotland way down the road after I've spent years trekking out west....the JMT has me hooked!!!!

For hiking? The Hiker's Haute Route in France and Switzerland. The Camino de Santiago. Anywhere in Ireland or Britain.
For "backpacking"? (i.e., touristing with a backpack and staying in hostels) -- Eastern Europe.

It's hard to top Dogwood's list, great destinations all around the globe. BRAVO sir !! My ancestry begins in Ireland so that has always piqued my desire to visit and hike there.
Getting lost is a way to find yourself.
